Broccoli Cheese Quiche is a yummy dish which broccoli and cheese lovers will adore and can be adapted quite easily for the food preferences allfamily members. We also call this Broccoli Cheese Pie in our kitchen aka the healthy pie!

This is a quick and easy recipe which can be an entréeor side dish. Broccoli florets are used (but chopped broccoli can also be used).

The consistency of the quiche is determined by the preparation of the broccoli. For a very smooth consistency (like a pie) use frozen broccoli florets or fresh broccoli and cut off the stalks from the florets.A food processor can be used to further chop or even puree the broccoli.

If you prefer a chunkier version, use the broccoli florets as is whether using frozen broccoli florets or fresh broccoli.

Spinach can easily be substituted for broccoli as well. Fresh broccoli or fresh spinach or frozen broccoli or frozen spinach – all work! This is a basic recipe which can be easily tweaked or spiced up with tomatoes, onion, herbs, salmon, carrots, zucchini.

Ingredients

  • 4 beaten eggs
  • 1.5 cups milk
  • 1 cup shredded or crumbled cheese (swiss, goat, feta) or cheese of your choice
  • 1 package Knorr Spring Vegetable Soup & Recipe Mix
  • 1 package (10 oz.) Broccoli Florets or 1 head fresh broccoli
  • 1 frozen deep dish pie crust OR puff pastry sheets

Directions

  1. Heat oven to 375 degrees.
  2. Place pie crust in baking dish. Put baking dish on a cookie sheet in case of overflow.
  3. In a large bowl combine the first 5 ingredients.
  4. Pour into pie crust.
  5. Sprinkle extra cheese on top.
  6. Bake 50 minutes or until a knife inserted in the middle comes out clean.

How To Make Broccoli Cheese Puffs

This version does take a bit more labor, but if you enjoy puff pastry, this is a nice variation and makes a fun side dish. Single serve broccoli cheese puff pastry are bigger than a bite, but smaller than a slice.

Directions:

  1. Spray glass dish with cooking spray.
  2. Roll puff pastry sheet to a size big enough to cover bottom of the pyrex dish and half way up the sides.
  3. Gently place puff pastryinto pyrex dish.
  4. Prick bottom of crust a few times with a fork.
  5. Pour 5 ingredient mixture into dish.
  6. Sprinkle with cheese.
  7. Bake 45-50 minutes until set.
  8. Insert a toothpick in the middle of the Broccoli Cheese to check if the pie is completely cooked.
  9. The toothpick should come out clean.

How To Make Low Calorie Broccoli Cheese Quiche

The recipe can be also be adapted to a lower calorie version by adjusting the type of milk and cheese used!

The broccoli cheese recipe tolerates tweaking very well and the taste and consistency will not be compromised by using low fat ingredients. I found the family loved all three versions.

This is a great recipe for those on a soft food diet as it easy to eat and freezes well. The nutritional profile of broccoli is very positive including low saturated fat and cholesterol values.

Notes

For a very smooth consistency use frozen broccoli florets or fresh broccoli and cut off the stalks from the florets.A food processor can be used to further chop or even puree the semi frozen broccoli florets.

If you like the broccoli florets whole, simply use the florets as is if using frozen or cut from a fresh broccoli stalk.

Spinach can easily be substituted for broccoli as well. Fresh broccoli or fresh spinach or frozen broccoli or frozen spinach - all work! This is a basic recipe which can be easily tweaked or spiced up with onion, herbs, or carrots.
