They grew darker and tougher with age and nobody wanted to buy those ugly ducklings. But then some PR genius working for the growers association got a bright idea: Why not give them a fancy name with a vague Italian sound and set a stiff price on them as if they were some rare gourmet stuff? The name chosen was "portobello," something picked right out of thin air. It may have some meaning like "pretty portal," or whatever. To the surprise of all concerned and the delight of the growers, the ruse worked beyond the expectations of the PR guru and his clients. Some cooks, even chefs, were clamoring for portobellos, or was it portobella or portabella.

The word was not in any lexicon, food or otherwise, so people could improvise. But the main thing was that they were selling, and selling fast. Of course, there are solid reasons why the trend has lasted for so the unlikely fruit and that generated some interest in the specialty produce market back home. Who else but the pioneering, trendsetting produce diva Freida Caplan of Los Angeles would import a consignment of Chinese gooseberry to U.S.? But those furry balls that looked like some scary creatures languished in her warehouse. In a moment of inspiration, she or some of her associates got the bright idea for naming them kiwifruit, linking it to the kiwi bird, New Zealand's national symbol, the furry body of which does indeed bring to mind the shape and texture of the fuzzy fruit.

The rest is history, and again this name change managed to make the fruit, with its luminous jewel-like inside and sweet-tart taste, another darling of innovative chefs. There was a recent move also to revive sales of the old, stodgy prune by renaming it "dried plum" and distancing it from the grip of the senior citizens. I am not so sure that that worked so well. Consider, too, some other innovative names, such as Haagen-Dazs (another out-of-thin-air name) that made the ice cream trendy; or Chai, the word for tea in the Indian subcontinent, that put a special cachet on the Seattle company's tea. Here is a simple recipe for serving the portobello as a steak substitute.

Brush two large portobello mushrooms with a soft brush or damp towel to clean off any clinging dirt. Take the stem off. Drizzle with extra virgin olive oil and sprinkle both sides with McCormick Grill Mates Montreal Steak seasoning. Let marinate for 30 minutes. Grill outdoors over medium high for about 5 minutes per side.

Serve topped with a fried egg on each, along with buttered slices of a good quality bread, grilled at the same time. Slices of kiwifruit will make a nice garnish. Serve with a steak knife to two. A sale-reviving name change links these two disparate denizens of the Vegetable Kingdom the portobello, an overgrown crimini mushroom, and the kiwifruit that once bore the uninspiring name of Chinese gooseberry.
