With just a few ingredients you can whip up this low carb dessert any day of the week. And it might be a good keto dessert for Valentine’s Day so keep it in mind! Only 3.2g net carbs per piece.

Last month I made a sugar free chocolate chip cheesecake in the air fryer and my family really liked it. More importantly I really liked it and it was so quick and easy that I had to make another. This super easy keto berry cheesecake was actually a test keto dessert for Valentine’s Day but it worked so I’m sharing it now.

It tastes great and only has 3.2g net carbs per serving so that is a win for me. Now let me show you how to make this yummy keto friendly dessert!

Berries Are Low Carb And Keto Friendly

While fruit is healthy and good for you, most fruit has a lot of carbs because of the natural sugars. However berries are lower in sugar and high in fiber so the net carbs are lower than most fruit and they are full of nutrients . Here is a good article about keto friendly fruitif you are interested. For 3.5oz the net carbs counts for these popular berries are:

  • raspberries – 5g net carbs
  • blackberries – 5g net carbs
  • Strawberries – 6g net carbs
  • blueberries – 12g net carbs

Sugar Free Cheesecake Ingredients

The basis of this sugar free cheesecake is cream cheese, Swerve confectioners sweetener, eggs, fresh mixed berries (raspberries, strawberries, blackberries) and some raspberry extract. By the way I really like Frontier’s extracts.

Lately I’ve been buying their flavorings and extracts and especially like thisraspberry extract and their maple one too.

When I had a gift shop way back when I sold a lot of Frontier products because they had a large selection of healthy products and they were very high quality in my opinion. So I highly recommend their extracts for making keto desserts. It’s a good way to add flavor without carbs. Note extracts do not have any sweetness, only flavor.

How To Make A Cheesecake In The Air Fryer

I’m so glad I figured out how to make a low carb dessert in the air fryer because I am not much of a baker but I do have a sweet tooth. Here’s how I make a quick cheesecake in the air fryer.

  1. In a large mixing bowl whip the softened cream cheese and Swerve sweetener until nice and creamy.
  2. Next add in the eggs and raspberry extract. Mix well.
  3. In a blender or food processor, crush the berries and then mix into the cheesecake mixture along with the 2 extra tablespoons of Swerve.
  4. Grease a springform pan and then spoon in the mixture. I used a 7 inch springform pan.
  5. Place the cheesecake pan into the basket of the air fryer and cook at 300°F for 10 minutes. Then lower the temperature to 250°F for 40 minutes. You know it’s done when you gently shake the pan and everything seems set but the middle jiggles a little.
  6. Take it out and let it cool down a bit before refrigerating. Keep it in the refrigerator for 2-4 hours. The longer the better to let it completely set up.

What To Put On Top Of This Keto Cheesecake

I opted for a few strawberries to decorate this cake. If you want to make them into hearts for a Valentine’s Day keto dessert, you can slice them lengthwise and round off the tops. To be honest I did this in a hurry and didn’t do a very good job but it’s not hard.

You can also make some low carb mixed berry sauce for the top. Check out this sugar free berry sauce from my chia pudding. Lastly you don’t have to put anything at all on this cheesecake.

Recipe Notes And Tips

  • I used raspberry extract however if you don’t have it you can just use vanilla.
  • Philadelphia cream cheese seems to work better for me than other brands for cheesecakes. I don’t know why but it does.
  • I used a 7″ springform pan so you have an idea of the size. Make sure your pan fits in your air fryer.
  • While I used a mixed berry sauce, you can use just one berry if you wish. Just make sure to calculate your own nutritional information.
  • Make sure you refrigerate this recipe for a few hours before eating or it won’t set up.

Super Easy Keto Berry Cheesecake in the Air Fryer

This super easy keto berry cheesecake is a breeze in the air fryer. You only need a few ingredients to make this yummy low carb dessert.

Ingredients

  • 2 - 8oz blocks of cream cheese, softened
  • 1 cup + 2 tablespoons Swerve confectioners sweetener
  • 2 eggs
  • 1 teaspoon raspberry extract (can use vanilla too)
  • 1 cup berries (I used ½ c raspberries, ¼ c strawberries, ¼ c blackberries)

    I thought a cup of sweetener seemed excessive – but did it anyway and damn it was way to sweet 🙁

      Hi Chris, I wanted to remake this before I emailed you. I tried it with using 3/4 cup and it baked just fine and I thought it was still good. My husband thought it should be sweeter but I thought it was fine. So next time you can taste it with less sweetener (before you put the eggs in) and adjust accordingly.

      I think the reason I put so much in is that I used frozen berries and they are never very sweet to me.

    What can you use if you don’t have a springform Pan?

      Hi, I think you can use any glass pie dish or just a rectangular baking dish that can fit in the air fryer. I would spray it well first with cooking spray so it doesn’t stick.

    Since I do not have an air fryer, can I use the same temps and time in a
    regular oven? And same amounts of ingredients? I am diabetic and this
    Recipe should work for me since I follow LCHF. Thank you for any info.

      Hi, I am not sure as I have not made this in the oven. However I found an article that says to convert an oven recipe to an air fryer recipe you would reduce the temp by 25° and decrease the cooking time by 20%.

      So using that logic, I would say to add 25° to the temperature and increase the time by 20%. Start at 325°F for 12 minutes and then lower the temperature to 275°F for 48 minutes.

      However I have never done this so I am not sure.
