Let's face it, the holiday season is a busy one. There are parties to attend (or host), gifts to purchase and wrap, children's school programs to go to, and all the additional family holiday activities to coordinate. Not to mention all decorating and holiday baking that goes into making the season merry and bright.

With this recipe for Slow-Cooker BBQ Pulled Chicken Sandwiches you'll be able to feed a holiday crowd, while virtually spending only minutes of preparation time in the kitchen. This stress-free, delicious and unexpected twist on BBQ pulled pork will delight your family and friends, all while freeing you up to cross off some of the other one-hundred-and-one things on your seasonal to-do list. If you're wondering why I used a combination of boneless, skinless chicken thighs and breasts, it's to keep the pulled chicken as moist and flavorful as possible. Because sometimes boneless, skinless chicken breasts can be dry due to the lack of fat, I wanted to pack in as much moisture and flavor as I could.

Even if you're not serving this BBQ Pulled Chicken for a party, because it makes a lot you can store it in the fridge for up to week for your family to heat-and-eat on all those busy holiday evenings. Plus, it freezes wonderfully well so if needed you can divide it up into smaller portions for those times when there's no time to cook but you're craving a home-cooked meal.

SLOW-COOKER BBQ PULLED CHICKEN SANDWICHES {PRINT THIS RECIPE}
Yield: 16-20 sandwiches Prep Time: 5 minutes Cook Time: 8 hours on high

3 lbs. boneless, skinless chicken thighs
2 lbs. boneless, skinless chicken breasts
24 ounces cherry cola (I used diet Dr. Pepper)
½ cup balsamic vinegar
2 teaspoons kosher salt
1 teaspoon black pepper
4 cloves garlic, minced
3 tablespoons prepared horseradish
4-5 sprigs of fresh thyme
1 cup BBQ sauce (homemade or store-bought), plus additional for serving
Sliced red onions for serving, optional
dill pickle slices for serving, optional
Buns

-Add the chicken to the cooker. Add in the next 8 ingredients. Cover and cook on high for 8 hours.

-Remove the chicken to a bowl or dish using a slotted spoon and shred with two forks. Add additional cooking liquid if desired and additional BBQ sauce as needed.

-Serve on buns with additional BBQ sauce, onion slices, and dill pickle slices if desired.
