Favorite Lasagna Soup Recipe

This time of year soup recipes aredefinitely on the menu. I’m sharing one of my family’s favorites, easy lasagna soup. The best thing about this recipe is that it’s made all in one pot!

If you love all the delicious Italian flavors like Italian sausage, pasta, tomatoes, garlic, basil and cheese in a traditional lasagna, you are going to love this soup version. I even have a crockpot lasagna soup, too!

Why You’ll Love This Lasagna Soup

  • One pot: All the comfort of lasagna but easily made in one pot with no layering or even rolling like in these lasagna roll ups!
  • Comfort food: Pasta, cheese and a rich tomato sauce in a comforting bowl of soup, my family can’t get enough of this soup, chicken gnocchi soup or sausage tortellini soup, too!

Easy Lasagna Soup Ingredients

The ingredient list may look long, but I promise this comes together quickly and contains simple ingredients you might already have!

Find the fullprintable recipewith specific measurements below.

  • Italian sausage: I prefer mild Italian sausage, but use your favorite.
  • Onion and garlic: Classic aromatic ingredients that add lots of flavor.
  • Chicken stock: To thin out the sauce into soup consistency.
  • Tomatoes: Two 15 oz cans of petite diced tomatoes with their juices and tomato paste.
  • Seasonings: Oregano, Italian seasoning, freshly chopped basil, salt and pepper.
  • Lasagna noodles: Regular lasagna noodles broken into smaller pieces or if you can find mafalda pasta that works, too!
  • Cheese: Freshly grated parmesan cheese, mozzarella cheese and Ricotta for topping.

Lasagna Soup Variations

  • Meat: Can use ground beef, ground turkey or ground pork instead of sausage (although sausage definitely adds more flavor). Add in 1/2 teaspoon more Italian seasoning to compensate.
  • Pasta substitutions: If you don’t have lasagna noodles, you can add in other types of pasta like ziti noodles or fusilli.
  • Spicy: Feel free to sprinkle in some red pepper flakes for a boost of heat.
  • Veggies: Add more vegetables with the onion and garlic. Mushrooms, zucchini, bell peppers and yellow squash or zucchini would work great.
  • Fresh herbs: Sprinkle in some fresh parsley right before serving for added flavor.

How to Make Lasagna Soup

Warm and comforting soup in one pot, it doesn’t get any easier or better than that!

  • Add sauce and spices. Add in chicken broth, tomatoes and tomato paste and stir to combine. Then add in oregano, Italian seasoning and basil. Bring to a light boil.
  • Cook lasagna noodles. Add in the uncooked lasagna noodle pieces. Cook for 8-10 minutes, or until the noodles are tender.
  • Serve.Add in the parmesan, mozzarella cheese, salt and pepper and stir to combine. Ladle lasagna soup into bowls and top with a dollop of ricotta cheese and fresh basil. You can always add more parmesan if you love cheese. Who are we kidding? More cheese is always a good idea!

Serving Suggestions

This one pot lasagna soup is definitely a recipe to add to your menu this during the colder months and it’s the perfect comfort food.I love to ladle it into bowls with a dollop of ricotta cheese on top.

This dish pairs perfectly with a bigchopped salad or Caesar saladand myeasy garlic bread.Other favorites include this cheesy garlic bread and an Italian salad for a complete dinner idea.

Storage

  • Store: Store leftovers in an airtight container in the refrigerator for up to 4 days. The noodles will soak up some of the liquid while in storage so when reheating add some chicken stock or broth.
  • To freeze: If you plan on freezing this soup, I’d recommend freezing the base of the soup without the noodles and cheese. When ready to enjoy, thaw soup, make noodles separately and add to the reheated soup. Stir in cheeses and enjoy.

Ingredients

  • 1 Tablespoon olive oil
  • 1 cup chopped onion
  • 2 teaspoons minced garlic
  • 1 pound mild Italian sausage , casings removed
  • 32 ounce container chicken stock
  • 30 ounces petite diced tomatoes with juice (two 15 ounce cans)
  • 6 ounce can tomato paste
  • 1 teaspoon ground oregano
  • ½ teaspoon Italian seasoning
  • 2-3 Tablespoons freshly chopped basil , more to taste
  • 8 uncooked lasagna noodles , broken into bite-sized pieces
  • ½ cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese , optional
  • Kosher salt & pepper , to taste

Ricotta cheese for serving

    Instructions

    • Heat the olive oil in a large pot over medium-heat. Add in the onion and cook for 2-3 minutes. Stir in the garlic and cook an additional minute. Add in the sausage (break up with a wooden spoon) and cook until browned. Drain any excess grease.

    • Add in chicken stock, tomatoes and tomato paste. Stir until combined and then add the oregano, Italian seasoning and basil. Bring to a light boil and then add in the noodles. Cook for 8-10 minutes, or until the noodles are tender.

    • Stir in the parmesan cheese, mozzarella cheese and salt and pepper to taste. Ladle soup into bowls and top with a spoonful of ricotta cheese and more basil if desired.

    Notes

    • You can substitute with ground beef or turkey. I would just add in 1/2 teaspoon extra Italian seasoning.
    • You can also sneak in a cup of shredded carrots or zucchini for added veggies.
    • If you’d like the soup thinner, add more chicken stock or broth.

    Crockpot version:

Brown the sausage and onions ahead of time. Then add all of the ingredients except the noodles and cheese and cook for 7-8 hours on low or 3-4 hours on high.

Cook the pasta al dente (slightly firm) and add to the crock pot and cook for an additional 15-20 minutes. Stir in the cheese right before serving.

We love this soup! I use turkey sausage, gluten free lasagna noodles and then set out the cheeses for each to add to their own bowl so as to accommodate a dairy allergy in the family. Regardless without any cheese it still has fantastic taste!

    FAQs

How do you make lasagne not runny? ›

When you place each layer in the baking dish, be certain the moisture is at a minimum. Use low moisture mozzarella cheese to keep the melted cheese gooey, but not runny. Make sure to completely drain the pasta…. even patting the pieces dry.

Do you bake lasagna at 350 or 375? ›

The cooking time for oven-ready lasagna noodles can vary depending on the recipe and the specific brand of noodles you're using. However, as a general guideline, you can expect oven-ready lasagna to cook in the oven for about 45 minutes to 1 hour at 375°F (190°C) to 400°F (200°C).

How long should you let lasagna rest? ›

When the lasagna is ready it is difficult to resist the temptation to immediately eat it, but be careful because even in this case you have to be a little patient. Wait for your lasagna to rest for about 20 minutes once it is baked, in this way it will not fall apart when cut.

Do you cook lasagna covered or uncovered? ›

Cover the baking dish with aluminum foil. Bake in the preheated oven for 30 to 40 minutes. Remove the foil and bake until cheese is golden brown, 5 to 10 more minutes. Remove from the oven and let stand for 10 minutes before cutting and serving.

Why is my homemade lasagna watery? ›

The sauce could be too watery. The noodles can be holding on to water. The vegetables are releasing excess moisture. If you are using ricotta be careful of the moisture it can add.

Do you have to add extra water no boil lasagna? ›

For those of you that just can't see how this no-boil-regular-noodle-pasta-thing is going to work you can soothe your nerves by adding a 1/4 cup water (pour it down the sides) to the lasagna. I've made this type of no-boil lasagna with and without the extra water, and it really does not need it.

Should you cover lasagna with foil while baking? ›

If uncovered, the prolonged exposure to heat will quickly dry out your lasagna, no matter how much sauce you've added. Make sure to always add a layer of tin foil over your baking dish, which will trap the moisture inside while still allowing the dish to cook properly.

What is the best temperature to bake lasagna? ›

    Instructions for Frozen

My research found that 400 degrees Fahrenheit is the best temperature for my frozen lasagna and thawed lasagna. It's the bake time that will increase. Preheat your oven to 400 degrees Fahrenheit.

Why does lasagna take so long to bake? ›

Precooked or not, a lasagna is a dense mass of food that has to be heated through, and that's going to take some time. Putting heat to food also causes chemical and physical changes that heighten the flavor and texture of the finished product.

Why does my lasagna falls apart when I cut it? ›

Mistake number 9: serving it as soon as it's out of the oven

Do you struggle with trying to cut freshly baked lasagna without it falling apart. As tempting as it might be to dig in right away, letting it rest for at least half an hour is key. Once it's had time to settle, cutting it into equal squares is easy peasy.

Is it better to make lasagna the day before or the day of? ›

If you make your lasagna the day before, it will probably taste better! Letting the dish set for a day let's the flavors meld. Just make sure that when you do make it, you don't overcook it is — that will make the pasta soggy; remember, you will need to reheat it when you are ready to serve.

Can I put lasagna together and bake it the next day? ›

Lasagna is the kind of food that can keep a family fed for many nights in a row, happily. But it has other perks, too: namely, that you can prepare the whole thing in advance, and store it in the fridge overnight—ready to pop in the oven an hour or so before dinner (just before the kids start to whine).

Is it better to cook lasagna in glass or metal pan? ›

For a lasagna that looks amazing and tastes great, it's important to skip the metal pan and go straight for the glass bakeware. Glass baking pans obviously don't contain aluminum, so you can layer your sauce, noodles, and cheese without worrying about losing flavor to a chemical reaction.

What happens if you forget to cover lasagna with foil? ›

If you leave a top layer of cheese uncovered to cook for the entire time you may get an overdone crispy top layer dried out. I generally in order to keep the lasagne top layers from drying out cook covered. Then add a layer of cheese the last 10 to 20 min's to melt the cheese uncovered.

Is it OK to make lasagna in a metal pan? ›

Yes, lasagna can be made in a metal pan. Metal pans are a common choice for lasagna, as they are sturdy and can withstand the high heat required for baking. Just make sure to grease the pan before adding the lasagna noodles and other ingredients.

How do I make my lasagna more solid? ›

She also suggests raising your oven temperature a bit and using a thickening agent in your sauce. So either add more meat OR more tomato paste, if your lasagna is meatless. (And no, foregoing that first layer of sauce at the bottom isn't necessary.)

How do you keep lasagne firm? ›

One quick idea ( and maybe obvious so I'm just including it here) is to make more layers. You might be surprised as to what one layer can do. Five layers (rather than four) in a pan will make a more compact and solid lasagna.

Why is my lasagna not setting? ›

Reduce the mixture to ensure it's got a hearty, thick consistency. Ricotta is another culprit for soupy lasagna, but that can also be drained. Just strain the ricotta in cheesecloth to allow any moisture to drip out before adding it to the mix. Lastly, beware of vegetables that might give off water when cooked.

Is lasagna supposed to be liquidy? ›

So, to achieve the perfect lasagna, the consistency of the sauce is absolutely essential. Both the ragù and béchamel sauce should be dense and creamy. Avoid sauces that are too liquid and slide to the bottom of the dish. A thicker consistency of the sauce will allow the pasta to be flavoured in the best possible way.
