Boneless Prime Rib Recipe

When I say this is one of the easiest rib roast recipes you will ever make, I mean it! This recipe is a showstopper and perfect when served over creamy mashed potatoes or instant pot mashed potatoes.

This boneless rib roast recipe is as delicious as it gets. Using just salt, pepper, and a beautifully marbled cut of beef, I will show you how to make the juiciest, most tender rib roast. It's perfect for serving at Christmas Dinner.

This was my first time making a boneless prime rib and it turned out perfectly. My family was so impressed. Thank you for the step-by-step recipe. I will never make it any other way!

Boneless Rib Roast Ingredients

  • Boneless rib roast
  • Sea salt
  • Freshly cracked black pepper

The key to cooking a beautiful roast is picking a cut of beef with perfect marbling.

Marbling refers to the white lines of fat running through the beef. The better the marbling, the more flavor your roast will have! Look for fine, web-like marbling.

TIP—Remove your roast from the refrigerator 30 minutes before cooking it and allow it to come to room temperature. This way, it will cook evenly!

  • Let your roast rest! Once it's done roasting, tent your beef with foil and let it sit for 15 minutes before carving.

How to Season Prime Rib

A rib roast is so flavorful that I keep our seasoning simple: just salt and pepper. We recommend using sea salt. The taste and texture of sea salt are perfect and give it the perfect crust. Our prime rib rub recipe works well, too. I especially love it on grilled prime rib.

How Long to Thaw a Boneless Rib Roast

Place your rib roast in a pan in the refrigerator for at least two days before you plan to cook it so it thaws completely. For larger roasts, allow an additional day. Bring it to come to room temperature, then follow the roasting instructions!

You can easily make au jus with drippings to use for this recipe. Follow these instructions to make your au jus: Best Au Jus for Prime Rib.

I made it. I was concerned and cooked it a bit longer. I wish I had not. It came out as Medium and not Medium Rare. But! it was awesome. I did make a few changes: I rubbed some Butter on it it and added some garlic. The crust was perfect and tasty. Oh, I did shake some Rosemary too.

How long should I cook a 2 lb roast?

    Reply

    • Em Beitel says

Hi JoJo! We haven't actually attempted anything smaller than a 3 lb. roast, but I do have some recommendations for you. First, it depends on what internal temperature you want for your beef, and you will absolutely need a meat thermometer. Check out our Prime Rib Temperature Chart for the different degrees of doneness and what temperature to look for. For medium rare I would say you want to roast it at about 15 minutes per pound. I would personally roast it for about 30 minutes, then check the internal temperature with a meat thermometer to either make sure it's at the temperature you want, or to check how much time it still needs. If you feel it needs more time, I would say leave it in for another 10 minutes before checking it again.

I need about 10 pounds of meat. If I cooked 2 5# roasts, would I sear them both for 15 minutes, then cook them both for 1 hour and 45 minutes? If one was 6 pounds and one was 4 pounds, could I pull one out 10 minutes early?

    Reply

    • Em Beitel says

Hi Cheryl! I can't tell you for sure whether you would pull one of the roasts out 10 minutes early or if this would be accurate for cooking two of them together. For this, I recommend using our temperature chart and a meat thermometer inserted into the thickest part of the roast to make sure the temperature reaches what you're looking for. Regardless, you would want to sear both as instructed in the recipe (the 15 minute sear would not change based on pounds).

I'm looking at the cook times and after the 15 sear @ 450 it appears as though you add 5 minutes to cook time for each additional pound over 4#. So am I wrong in the thinking that a 10lb boneless prime rib should be cooked for approximately 2hrs 10 minutes? Also are the rub ingredients and quantities based on a 4# roast as well?

    Reply

    • Em Beitel says

Hi Tom! Thank you for your question! That's right - 15 minute sear at 450, then I would say approximately a 2 hour 10 minute cook time at 325 for medium rare.
The rub quantities are based on a 5 pound roast (our smoked prime rib), but if you hover over the "6" in the quantity of the rib rub recipe, you can change the servings to be larger and it will automatically calculate the results for you.
      Enjoy!

I just found a standing rib roast for $3.99 a pound bone in. I had the butcher cut it up take the bone part out and then tie it back up for me. I consider myself a good cook but I never make the standing rib roast. If you have a United groceries outlet close to you that's where I got it.

    • Isabel Laessig says

Hi, Mike! Yes, it will work! You'll want to adjust the time slightly. Sear as instructed, but I would cook for about 1 hour and 53 minutes for a 6 pound bottom round/rump roast. Check at the 1 hour and 30 minute mark with a meat thermometer to make sure, as it might be done sooner than that.

FAQs

Is boneless rib roast the same as prime rib? ›

Butchery: Both rib roast and prime are primal cuts of beef; however, prime rib recipes call for the cut to remain whole, whereas a butcher typically divides a rib roast into individual ribeye steaks. The rib roast is generally a boneless cut of meat, while prime rib comes with the bone still in it.

Do you cook a boneless prime rib roast fat side up or down? ›

Season boneless rib roast on all sides with salt and pepper. Place on a roasting rack, fat side up; roast for 15 minutes. Reduce heat to 325°F163°C and continue roasting approximately 2 1/4 hours for medium (when thermometer registers 135-140°F58-60°C before resting) or until desired doneness.

Is it better to cook prime rib at 325 or 350? ›

Start by cooking your prime rib at 500°F for 15 minutes and then lower the oven temperature to 325° F and cook for 10-12 min per pound for rare, or 13-14 min per pound for medium rare, or 14-15 min per pound for medium well. A meat thermometer is essential to ensure you cook it perfectly!

How long do you cook prime rib at 325 or 350? ›

Reduce the oven temperature to 325°F. Roast in the oven until the thermometer registers 115°F for rare or 120° for medium rare, and 130°F for medium. To estimate the total cooking time, allow about 11 to 12 minutes per pound for rare and 13 to 15 minutes per pound for medium rare.

How many does a 4 lb boneless prime rib feed? ›

If the roast is part of a holiday buffet, estimate that your guests will eat about half a pound per person. If it is the main course for a sit-down dinner, plan on one pound per person or one rib for every two diners.

What's the difference between a rib roast and a prime rib? ›

Commonly found at steakhouses, rib roasts and prime rib are two of the most luxurious and expensive cuts of beef. Both rib roast and prime rib come from the ribs of the cow, but one difference is that the whole rack of ribs makes up a standing rib roast, while only the ribs near the loin are cut and sold as prime rib.

Why is my prime rib always tough? ›

Overcooking the Prime Rib

That's why prime rib is so expensive: it's a huge piece of extremely good beef. Therefore, it's important not to cook it beyond medium-rare. Going past that temperature means the roast will no longer be tender.

Do I need to tie a boneless rib roast? ›

Tying for Uniform Shape:Tying the ribeye roast with kitchen twine can help maintain a more uniform shape during cooking. This is especially beneficial if you're roasting the meat in the oven, as it ensures even cooking. Even Cooking:Tying can help the roast cook more evenly.

Is it better to buy bone-in or boneless prime rib? ›

We prefer bone-in prime rib because the bone insulates the meat as it cooks and produces more flavorful and tender results, but we suggest buying the type that is called for in the recipe you are using. The primary benefit of getting boneless is ease of carving.

Which is better bone-in or boneless rib roast? ›

Buying Bone-in or Boneless

I prefer to purchase prime rib with the bones still attached. While I do cut the bones off, I've found that bone-in rib roasts have more real-estate and are less trimmed down. I like this, because I get more control over prepping my roast.

Should you put water in the bottom of the roasting pan when cooking prime rib? ›

This will allow the meat to cook more evenly. Preheat the oven to 450°F. Pour 1-2 cups of water or beef broth in the bottom of a roasting pan. As the fat from the roast drips into the pan as it cooks, this will prevent it from burning in the bottom of the pan.

Should I sear a rib roast before roasting? ›

Searing is an important part of roasting a prime rib. Searing the roast first will kill the surface bacteria, which is a nice touch, especially when you are roasting at lower temperatures.

How do restaurants make prime rib so tender? ›

How do restaurants make prime rib so tender? The secret to restaurant-style prime rib is cooking the meat super slow at low temperatures. I recommend cooking prime rib at no higher than 200 degrees F. This cooks the meat very slowly, turning the fat into butter and rendering the proteins juicy and soft.

Does boneless prime rib cook faster? ›

A prime rib roast is the same as a boneless ribeye roast, only the bones have been cut away. I find cooking a boneless ribeye roast much easier than a standing rib. If you want a prime rib roast, this is the same cut, but no bones and it cooks faster!

What temp is medium for boneless prime rib? ›

A thermometer is the only way to guarantee perfectly cooked meat, and a good instant read thermometer is the best one for the job. Aim for 115 to 120°F for medium rare (125 to 130°F after resting), or 125 to 130°F for medium (135 to 140°F after resting).

What is the best temperature to cook a prime rib roast?

What temperature is rare for boneless prime rib? ›

For optimal flavor and texture, cook prime rib to medium rare or an internal temperature of 130-135 degrees F. Ideally, you want to remove the meat from the oven or grill when the temperature reaches 120-125 degrees F (rare) and let it rest for about 20 to 30 minutes before slicing.
